Fresh & Spicy Shrimp and Avocado Appetizer

The weather is finally starting to feel like spring, and there’s no better way to enjoy it than outdoor dining! With Cinco De Mayo only a few days away, I wanted to share a fresh and delicious appetizer to enjoy with family and friends. This recipe isn’t only easy to assemble, but it utilizes fresh, high-quality seasonal ingredients you can find at your local FOODS CO® and enjoy! Cinco de mayo appetizer

We always make a point of hosting friends for Cinco De Mayo and celebrating in a pot-luck style where everyone can prepare their favorite seasonal dish. The fresh ingredients in this appetizer deliver a bold and bright flavor that is a crowd-pleaser. This recipe has a touch of spice, so if you’d rather omit this for kids or sensitive pallets, you can remove the pepper from the spice mixture. ingredients

  • 1 lb Shrimp (peeled)

  • 1-2 Medium HASS Avocados

  • 1 Lime

  • 1 tsp olive oil

  • 1/2 C Pineapple (chopped)

  • 1/2 C Red onion

  • 2 tbsp Cilantro (chopped)

  • 1 Can (8 oz.) Chopped Tomatoes with Green Chilis

  • 1/4 tsp Smoked Paprika

  • Pinch Cayenne pepper (optional)

  • 1/4 tsp pepper

  • 1/4 tsp garlic salt

Start by first cleaning your shrimp; make sure they are deveined, and tails are removed. Next, assemble your spices. Add salt, pepper, smoked paprika, and cayenne pepper to a bowl. Sprinkle over shrimp and let sit while you prepare the chopped ingredients.

Open tomatoes with chilis and add to a bowl (include 1/2 juices). Next, chop your pineapple, cilantro, and red onion, and reserve the avocado to add last.

Add oil to a non-stick pan and bright to medium-high heat. The oil should easily slide around when the pan is up to heat. Next, add your seasoned shrimp; they should quickly begin to sizzle—cook the shrimp for at least 2-minutes per side. You will be able to tell the shrimp is done when they start to curl and turn a bright shade of pink.

Once slightly cooled add your shrimp to the chopped mixture. Add garlic salt and gently toss with the juice of 1/2 lime. Serve with fresh tortilla chips from FOODS CO® and enjoy!
